The Humble Quesadilla of Quiet Confidence

"Two tortillas. One destiny."

Ingredients

  • 2 flour tortillas
  • 1 cup shredded cheese (sharp cheddar or Oaxacan — choose your warrior)
  • 1/4 cup black beans
  • Hot sauce, applied liberally
  • Butter for the pan

Method

  1. 1Heat pan on medium-low. Butter it.
  2. 2Tortilla down. Cheese. Beans. Cheese again — yes, twice. Top tortilla.
  3. 3Press gently. Flip when golden. The flip is a metaphor; you'll understand later.
  4. 4Slice into 6 wedges. Eat with hot sauce and a sense of accomplishment.
Sometimes the simplest meal teaches the deepest lesson: enough is a feast.
